Sassy Seasonal Snack

Hey y'all!
My friend Kristi recently shared this recipe with me, and it is PERFECT for the Belle on a Budget!  This is quick to whip up and will please even the most finicky of tastes.  My recipe is an amalgamation of a few different recipes that I have found, and I did NOT cave to the sugar free versions (If I'm going to eat dessert, I'm not going to feel guilty about it - period!).  In my search for a picture to go with it, I stumbled across i heart food blogs who I highly recommend.  Anyway, without further ado:  Pumpkin Cheesecake Fluff!

1 (16 oz) can pumpkin puree (NOT pumpkin pie mix)
1 (1 1/2 oz) box instant pudding mix, cheesecake flavor
1 (8 oz) container Cool Whip
pumpkin pie spice to taste

Combine all ingredients in order.  Chill for two hours.  Serve.

Isn't that simple?  Serve it up in whatever containers you wish - I would go ahead and separate the mix into 4 servings before refrigerating.  teacups, martini glasses, ramekins - use your imagination!  You can make a lower-cal version if you want, simply use light cool whip and sugar-free instant pudding.

  1. Oooh, here's a colorful, cheap way to fill up a plate with appetizers! You just need some cream cheese, a jar of whole dill pickles and some (can be completely cheap) deli ham. Soften the cream cheese as much as you can, spread it on the whole pickle, then wrap in ham. Slice and stack on a plate. It sounds weird, but the plate will be empty in no time!

  2. Lindsey, that sounds AWESOME. I'm pretty sure I'll be doing that soon! Do you use the little pickles or the huge pickles?

  3. I make an AWESOME bean dip that is way toooo yummy to be as easy as it really is. Saute a couple of cloves of garlic in olive oil until soft. Drain and rinse a can of cannellini beans (Goya's are the best). Add it all together in a blender, adding enough olive oil until it all blends well. Season with salt, pepper and dried herbs of your liking (I usually stick with rosemary that I have add in with the garlic and olive oil). Serve with crusty bread, crackers or veggies. It's a tasty and CHEAP alternative to store bought hummus.

    BTW I do something similar to Lindsay with thin scallions (green onions) and call them polish roses.

  4. Sounds absolutely yummy! My favorite cheap and easy desert is Cranberry Pecan Fudge (Cranberries and pecans optional)
    One 11.5 ounce bag milk chocolate chips
    One can chocolate frosting
    One 6 oz bag dried cranberries
    1/2 cup chopped pecans

    Line 8x8 pan with foil and butter it (I used spray). Melt frosting and chocolate chips in saucepan on the stove. Stir in cranberries and nuts. Put in fridge to chill. Turn out with the foil and cut into squares.

    It's awesome and super easy!
